Fluffy American pancakes

What is it

Unusually fluffy American pancakes. When cooked correctly they have a flaky texture that’s almost croissant-like, with small bubbles.

Ingredients

• 1 egg
• 1 cup flour
• 1 cup buttermilk
• 1 tsp baking soda
• 1/2 tsp salt
• (optional — if you want it sweeter) 1 tablespoon sugar

Prep

Mix ingredients in a bowl.

Cook pancakes on a griddle at medium-high heat.

This recipe comes from a late family friend, Mark. He optimized his pancakes for fluffiness.
